teff banana bread
Some of my fondest memories with my mom are baking cookies and cakes. When my parents came to visit last fall they bought me a mixer so it would be easier for me to bake with my little girl. I’ve been trying a few things here and there, and found a yummy healthy banana bread recipe that I really like using teff flour.
1 cup teff flour
3/4 cup whole wheat flour
1/2 cup currants
1/2 cup walnuts
1/4 cup dates (flour covered - optional)
1/2 tsp baking soda
1/2 tsp baking power
1 tsp cinnamon
3/4 cup sugar
1/2 cup butter
1 egg
2 banana
Preheat oven to 350F.
Mix baking soda, baking powder, salt, cinnamon and flour.
Cream together butter and sugar. Mix eggs and banana. Add dry ingredients, including nuts and fruits, and mix well.
Spoon into greased 9 inch loaf pan and bake for 40-45 minutes, or until toothpick comes out clean.
